EZ, Super Tasty Low Carb Beef Enchiladas

This recipe is amazing. Everyone in my family raved.

 
Here's what you will need:
1-2 lbs ground beef (I only used 1 to save $$, but go with 2 for a more substantial meal)
Enchilada sauce (10 oz can)
Roughly 2-3 cups of grated cheese (I used Colby-Jack)

2 sheets of Joseph's Lavash Bread*** (you could also use 4 Low Carb Tortillas, just cut to fit the dish)
1-2 tsp Chili Powder, to taste
1 tsp Ground Cumin
1 tsp Garlic Powder
2 Tbsp chopped onion (fresh or dried)
Salt and Pepper to taste
 
 
Do this:
Brown and crumble the ground beef with the seasonings. If you want to drain the grease, add the seasonings AFTER you cook and drain it. I used venison, which doesn't need draining, so I threw my seasonings right on in.
 
Add the can of enchilada sauce, heating through.
 
Lay one Lavash bread sheet on the bottom of the 9x13 pan, then spread half the meat mixture on top.
 
Top with enough shredded cheese to your taste.
 
Add on another Lavash bread on that and repeat with remaining meat mixture and enough cheese to suit you.

 
Heat at 350 for 20 minutes (my oven is off by 20 degrees, hence the 370 in the pic).

Toppings are IMPORTANT to this dish.
Be sure to have on hand:
sour cream
salsa
shredded lettuce
tomatoes
jalapenos
olives
