It's kind of sweet in flavor (like sweet potatoes) when left plain, but when added to other savory foods, it takes on a savory quality.
It can be difficult to understand how to use it, so I have 2 different tutorial methods here to help you out. Check the pics below or watch my youtube video below that, and you should be prepping & cooking spaghetti squash like a pro soon.
Your cooking time may vary according to microwave power and squash size. I have a different microwave now than I did in the pic string, and it takes me almost 20 minutes to get it cooked all the way.
Now, on to the recipe...
Ingredients:
- 1 small to medium spaghetti squash
- 1 lb ground beef
- 1/4 cup chopped onion
- Approximately 2 cups of tomato sauce (or one can, about 15 oz)
- about 1 tsp Italian seasoning (to taste)
- 3 or 4 oz of cream cheese
- 1 cup sour cream
- about 1-2 tsp onion powder (to taste)
- salt (to taste)
- your favorite shredded cheese (I used Colby-Jack)
Directions:
Prep then let spaghetti squash cook...while you...
Brown the ground beef with onion...while you...
Sit the cream cheese out to soften.
Drain the grease off the beef and add tomato sauce and Italian seasoning, heating through on medium or medium-low.
Mix softened cream cheese, onion powder and sour cream together well with a fork.
When the squash is done, put it in the casserole dish and sprinkle with salt and stir.
Put the cream mixture on top.
Level the meat mixture on top of that.
Cover with cheese to your taste.
Cover and put it back in the microwave for about 10 minutes, or you could pop it into a 350 degree oven for about 15 minutes.
