Quick, Easy, Low Carb Recipe: Shrimp Alfredo on Zoodles!

Today my daughter had soccer at 11:30, so the game wasn't over until almost 1. We had a few errands to run while we were out and about. By the time we made it home at 2:30, we were all starving!
Being low carb can sometimes seem like a pain, because you can't just pop some corndogs in the oven, or microwave a burrito, or pick up a pizza. But, there are actually lots of quick, easy options that can keep you in ketosis.
 
Today I pulled lunch off from start to finish in under 20 minutes!

I admit, I bought pre-peeled shrimp, so that wasn't a factor...and probably would've added 5-10 minutes if I'd had to peel them.
Here's how:
 
Ingredients:
2 Tbsp. Butter
1 lb small, peeled shrimp
Tony Cachere's Cajun Seasoning
Ragu Alfredo Sauce of Choice (I used Four Cheese!)
1-2 TBSP Bacon Grease
3-4 Zucchini to spiral cut
Onion Powder
Garlic Powder
Salt
 
How To:
Melt butter.
Toss in shrimp.
Sprinkle with Tony Cachere's and let cook on medium.
While cooking shrimp, nip off end of zukes and spiralize them (this takes about 1-2 minutes per zuke) onto cutting board.
Stir shrimp every so often. Shrimp will cook in around 4-5 minutes. Look for pinkness to indicate doneness.
Add the jar of Ragu Alfredo into the shrimp and mix well.
Let the sauce heat up, then transfer to a big bowl or Corningware dish.
Add the bacon grease to the pan you removed the shrimp and sauce from.
Once the bacon grease is melted, add the spiralized zukes.
Sprinkle on a dash of onion powder, garlic powder, Tony Cachere's and salt, all to taste.
Stir the Zoodles around every minute or so, and they will be perfect in about 4-5 minutes. Overcooked Zoodles are soggy and gross, so don't overcook.
Serve the Shrimp Alfredo over the Zoodles.
Done!
 
It's so easy, so tasty, and still good for you.
A wonderful, healthy, low carb, high fat meal in a flash!
