Low Carb Comfort Food? It's Roast with Gravy!

It seems like most "comfort foods" are sky-high in carbs.
If you miss them, I've got a good one for you today.
It is not the "cleanest" meal ever, because it does have a few processed foods in it. So it won't work for some of you food "purists" (no judgment either way...promise).
But, if you're faced with falling off the wagon or fudging just a little...well, I think the latter would be the better option.
So here it is:
Low Carb Roast with Gravy
amazingly simple low carb comfort food

You will need
roast of whatever size you prefer
can of Campbell's Cream of Chicken & Mushroom (this particular soup has less carbs than all the rest...go with this one, and don't worry if you're not a mushroom fan...you can't really taste them)
1/2 packet ranch dressing mix
low carb slow cooker meal
Line your slow-cooker with a liner bag for easy cleanup.
Put your roast in first, followed by the can of soup, then dump the ranch mix on top.
Crockpot recipe for roast
Set it to "low" and let it cook away for 6 to 8 hours.

It ends up looking like this, which I realize looks kinda unappetizing.

So, break apart the roast into chunks, stir it all up really well, and allow it all to soak up the gravy just a little.

When you dish it out, it looks much better.
And Oh.My.Word.
It tastes soooo good!
3 Ingredient Low Carb Recipe
Have you come up with low carb versions of your favorite comfort foods? Which ones do you wish you could convert?
For me, I'd LOVE to have red beans & rice with sausage. THAT seems impossible though :(
