Chicken Quarters are Cheap(er)!
So, yes, I appreciate recipes that incorporate chicken quarters. After all, you can get them for about .59/lb.
I've got a WONDERFUL recipe for you.
It is a HUGE favorite at our home.
Every single one of us, from the 6 year old picky eater to me, the Low Carb pro, all consider this a favorite worthy of eating once or twice a month.
It takes a while to cook, so you need to think ahead...but it's seriously easy and requires very little prep time. A "set it and forget it" kind of thing.
You DO have 1 semi-tough decision to make...
~Either~
Make your own ranch dressing
OR
Use your favorite bottled ranch
If you make your own, you can control whether or not there is gluten, MSG, etc., in it. If you use bottled, you're at the mercy of the maker!
(It's in the middle of my post about the joys of stick blenders, about half way down)
Now, once you have your Ranch figured out, here's what else you need:
- Chicken quarters WITH skin left on, bone-in (IMPORTANT! DO NOT USE SKINLESS!)
- Ranch dressing of choice
- McCormick Grill Mates Monterrey Chicken Seasoning
- Salt
DO THIS:
Preheat oven to 375 degrees.
Line the bottom of a broiler pan with foil for easy cleanup.
Lay chicken quarters, skin side up, on the top piece of the broiler pan. Pour a small amount of Ranch on each piece of chicken and use a large tablespoon to smear the Ranch all over the chicken.
Sprinkle with some salt and with McCormick Grill Mates Monterrey Chicken Seasoning.
Pop in the oven for 1 hour and 15 minutes.
It will get golden brown and the skin will be crisp and yummy.
SO STINKIN' GOOD!
